- 1 whole โ head of cauliflower, cut into florets
- 1 whole โ block (16 oz) extra-firm tofu, pressed and cubed
- 1 Tbsp โ olive oil, for roasting
- 1 whole โ ¼ cup olive oil, for chimichurri
- 3 Tbsp โ red wine vinegar
- 2 whole โ garlic cloves, minced
- 1 whole โ ½ tsp dried oregano
- 1 whole โ ¼ tsp salt
- 1 whole โ ¼ tsp red chili flakes
- 1 whole โ Black pepper, to taste
