- 1 cup โ Vegetable Stock or no-oil low-sodium store-bought vegetable stock
- 0.5 whole โ onion
- 2 whole โ garlic cloves
- 0.5 tsp โ curry powder
- 0.25 tsp โ cumin
- 0.25 tsp โ sweet or mild paprika
- 1 cup โ wheat Israeli couscous
- 0.5 whole โ tomato cored and cut into ¼-inch pieces
- 0.5 whole โ red or orange bell pepper cored
- 0.25 whole โ cucumber
- 4 whole โ scallions white and green parts
- 0.25 cup โ parsley
- 3 tbsp โ basil
- 2 tbsp โ raisins or currants
- 2 tbsp โ pine nuts
