Ingredients (for 4 servings)
- 2 Tbsp โ olive oil
- 1 whole โ large onion, diced
- 4 cloves โ garlic, minced
- 4 whole โ bell peppers, diced
- 2 whole โ ribs of celery, diced
- 1 can โ crushed tomatoes, no-salt added
- 3 cups โ low-sodium vegetable broth
- 2 cans โ red kidney beans, low-sodium, drained and rinsed
- 1 cup โ long-grain rice
- 2 tsp โ smoked paprika
- 1 tsp โ dried oregano
- 1 tsp โ dried thyme
- 1 whole โ ½ tsp salt
- 1 whole โ ½ tsp cayenne pepper
- 1 whole โ Black pepper, to taste
