One-Pot Spicy Jambalaya

    Heat a large pot over medium heat with olive oil. 2. Add the onion, garlic, bell peppers, and celery. Cook for 5-7 minutes, until softened. 3. Stir in the crushed tomatoes, vegetable broth, kidney beans, rice, paprika, oregano, thyme, salt, cayenne, and black pepper and bring to a boil. 4. Once a boil is reached, reduce the heat to low and simmer for 35-40 minutes, stirring occasionally until the rice is tender. 5. Adjust seasoning and serve warm.
