“Beef” and “Sausage” Chili
Hearty plant-based chili made with vegan beef and sausage crumbles, kidney beans, tomatoes, peppers, and warming spices, topped with cashew cheese and lime.

01Heat the olive oil in a large, heavy pot or Dutch oven over medium heat. Add the onions, garlic, red bell pepper, celery, jalapeno, oregano, ancho chili powder, and cumin. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften and the spices are fragrant. Stir in the diced tomatoes, vegetable broth, salt, and pepper. Bring to a simmer and cook for 15 minutes. Add the drained kidney beans, vegan beef, and vegan sausage. Continue cooking, stirring occasionally, for 10 minutes, until heated through and the flavors are well combined. Serve hot in bowls, topped with shredded cashew cheese and lime if desired.
