Lentil and Bean Chili with Buckwheat Muffin

    Preheat oven to 350°F. Mix the flaxseed with water and let sit for 5 minutes. 2. Combine the flour, baking powder, baking soda, salt, and cinnamon in a bowl. 3. Separately, mix the flax egg, milk, maple syrup, oil, and vinegar together. 4. Stir the wet ingredients into the dry ingredients. 5. Divide the mixture between 2 muffin cups and bake for 18-25 minutes or until a toothpick comes out dry. 6. While the muffins bake, heat olive oil in a pot over medium heat. 7. Sauté the onions for 3-4 minutes. Add garlic and cook for an additional minute. 8. Stir in the chili powder, cumin, paprika, and oregano. 9. Add the lentils, beans, tomatoes, and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes. 10. Serve chili warm with muffins.
