Buffalo Cauliflower Steak with Greens & Beans

01Preheat oven to 425°F. Slice the cauliflower into thick steaks and place on a baking sheet. Whisk olive oil, buffalo sauce, garlic powder, smoked paprika, salt, and pepper; brush over the cauliflower. Roast for 25-30 minutes, carefully flipping once, until tender and browned at the edges. Meanwhile, heat a skillet over medium heat and add the remaining oil. Sauté the greens for 2-3 minutes until wilted. Stir in the white beans, lemon juice, and a pinch of salt and pepper; cook until warmed through. Plate the greens and beans, top with the roasted cauliflower steaks, and spoon over any extra buffalo sauce before serving.
