Instant Pot Spiced Quinoa & Cauliflower

01Rinse the quinoa well under cold water. Set the Instant Pot to saute and add olive oil. Add onion and cook for 2 to 3 minutes until softened. Stir in garlic, cumin, turmeric, paprika, salt, and black pepper and cook for 30 seconds until fragrant. Add the quinoa, cauliflower, chickpeas, and vegetable broth, then stir well. Seal the lid and cook on high pressure for 1 minute, then allow a natural release for 10 minutes before venting any remaining pressure. Open the lid, fluff the quinoa gently with a fork, and stir in lemon juice. Serve warm, garnished with parsley if desired.
