Southwest Quinoa Breakfast Bowl

01Cook quinoa according to package. 2. Heat beans in a skillet or pot over low heat. 3. While the quinoa and beans are cooking, prepare Pico de Gallo by chopping onion, tomatoes, cilantro, jalapenos, and garlic. 4. Add all ingredients to a small bowl, the juice of one full lime, and sea salt to taste. 5. Peel and slice an avocado. Divide in half. 6. Remove beans from heat and put aside. Then scramble or fry eggs as desired. 7. Build each breakfast bowl by dividing all ingredients into two bowls.
