BBQ Jackfruit with Roasted Veggies

01Preheat oven to 425°F (220°C). Toss the bell pepper, zucchini, and red onion with olive oil, salt, and pepper, then spread on a baking sheet and roast for 25 minutes until tender and lightly browned. Meanwhile, heat a skillet over medium heat and sauté the shredded jackfruit with the BBQ sauce for 10-15 minutes until heated through and tender. Warm the tortillas. Divide the jackfruit, roasted vegetables, and black beans evenly among the tortillas and serve.
