Farro and Veggie Soup
A hearty, fiber-rich soup made with farro, mixed vegetables, white beans, and vegetable broth for a balanced, nourishing meal.

01Heat a large pot over medium heat and add a small splash of water or oil. 2. Add diced onion, carrots, and celery and cook for 5 minutes until softened. 3. Stir in minced garlic, zucchini, and dried herbs and cook for 1 minute. 4. Add farro, white beans, diced tomatoes, and vegetable broth. 5. Bring to a boil, then reduce heat and simmer for 25-30 minutes until the farro is tender. 6. Stir in chopped spinach during the last 2 minutes of cooking. 7. Season with salt, black pepper, and lemon juice to taste. 8. Serve hot.
