Gluten-Free Homemade Pizza with Arugula Salad

01Preheat oven to 375°F (190°C). In a bowl, mix almond flour, ground flaxseed, egg, olive oil, baking soda, and salt until a dough forms. Press into a thin round on parchment paper. Bake for 10 minutes. Spread tomato sauce over the crust and top with sautéed mushrooms, chopped artichokes, and mozzarella or dairy-free cheese. Bake for 10-12 minutes more until set and lightly golden. Toss arugula with olive oil, balsamic vinegar, and sunflower seeds. Serve the salad on top or on the side.
